Preheat the oven to 190 °C and line a muffin pan with paper liners.

In the first bowl, mix the almond milk and apple cider vinegar and let it sit for 5 minutes to form a thick plant-based milk curd. Then stir in the soy yogurt, melted coconut oil, and vanilla extract.

In a second, larger bowl, combine the white spelt flour, coconut sugar, baking powder, baking soda, fine sea salt, and freshly grated lemon zest.

Pour the wet mixture into the dry ingredients and quickly stir with a wooden spoon just until combined. It's important not to overmix the batter, as this is the only way the muffins will remain wonderfully fluffy.

Gently fold the fresh blueberries into the prepared batter (you can save a few for topping).

Evenly divide the batter among the prepared liners, top with the remaining blueberries, and bake in the preheated oven for 18 to 20 minutes, or until the muffins turn golden brown. Let them cool on a wire rack before serving.
