Preheat the oven to 175 °C and line a baking tray with parchment paper.

In a medium bowl, mix together the buckwheat flour, cocoa powder, baking soda, and salt.

In a larger bowl, use an electric mixer to beat the softened butter and coconut sugar until creamy. Add the egg and vanilla and mix again.

Gradually add the dry ingredients to the wet ones and mix until you get a uniform dough. Finally, gently fold in the dark chocolate chunks with a spatula.

Place the dough in the fridge for 15–30 minutes. This will keep the cookies from spreading too much while baking and allow the buckwheat to absorb moisture.

Using a spoon, form small balls and place them on the baking tray. Leave at least 5 cm of space between them.

Bake for 10–12 minutes. The cookies will still be soft to the touch at the end of baking, but they will firm up as they cool.

As soon as you take the tray out of the oven, sprinkle the cookies with a pinch of flaky sea salt. Let them sit on the tray for at least 10 minutes before serving.
