Instructions

In a large bowl, mix natural peanut butter, honey and vanilla paste. If the peanut butter is very firm, heat it in the microwave for 20 seconds to make it liquid and easier to mix.

Stir the protein powder, oat flour and salt into the wet mixture. Mix with a spatula until a dough starts to form. Toward the end you may need to use your hands to bring all the ingredients together well. Tip: If the mixture is too dry and crumbly, add a spoonful of almond milk.

Line a small baking pan with baking paper. Pour the mixture into the pan and press it firmly against the bottom with your fingers or the back of a spoon to get an even, smooth layer.

Melt the dark chocolate together with the coconut oil over a water bath or in the microwave (in 30-second intervals). Stir until smooth. Pour the topping evenly over the mixture in the pan.

Place the pan in the freezer for 20 minutes or in the refrigerator for at least 30 minutes to let the mixture set. Once firm, remove it from the pan and cut it into 10 bars with a sharp knife. Store in the refrigerator in a closed container for up to 2 weeks.
