Grate the zucchini and potato to a medium thickness. Chop the broccoli as finely as possible (or briefly pulse it in a food processor).

Place the grated vegetables in a clean kitchen towel and squeeze firmly to remove as much liquid as possible. The less moisture remains, the crispier the patties will be.

In a large bowl, mix the squeezed vegetables, broccoli, eggs, grated cheese, garlic and seasonings. Stir well until the ingredients are evenly combined.

Lightly grease the baking pan with olive oil. Distribute the mixture into each cavity and press firmly with your fingers or a spoon against the bottom and sides to form a patty shape.

Bake in a preheated oven at 200 °C for about 25 minutes, or until the edges turn golden brown and crispy. Before removing them from the pan, let them rest for 5 minutes.
