Instructions

Preheat the oven to 160 °C (fan-assisted).

In a bowl, mix the almond flour, Parmesan, all the seeds, salt and herbs.

Add the egg and olive oil. Knead the ingredients into a firm ball of dough. If the dough is too dry and cracks, add a tablespoon of water.

Place the dough between two sheets of baking paper. Roll it out as thin as possible (about 2–3 mm) with a rolling pin so the crackers turn out really crispy.

Remove the top sheet of paper. Using a pizza cutter, cut the dough into the desired squares or rectangles.

Transfer the paper with the dough onto a baking tray. Bake for 15–20 minutes, or until the edges turn golden brown.

Let the crackers cool completely on the baking tray, as they will only become truly crispy once fully cooled.
