Instructions

Wash and peel the carrots, then cut them into thin rounds. Place them on a baking tray lined with parchment paper.

Drizzle the carrots with olive oil and bake in a preheated oven at 200 °C for about 20–25 minutes, until softened and the edges are slightly browned.

Remove the roasted carrots from the oven and let them cool for a few minutes.

Put the carrots into a blender, add the ricotta, chopped garlic, lemon juice, zest, cumin, salt and pepper.

Blend all the ingredients until completely smooth and creamy. If the dip is too thick, add a tablespoon of water or oil.

Transfer the dip to a bowl, sprinkle with parsley, and serve with whole-grain crackers or vegetable sticks.
