Separate the egg whites from the yolks. Whisk the egg whites with a pinch of salt into firm, stable peaks.

In another bowl, use a whisk to mix the egg yolks, skyr, oat drink, and cinnamon. Add the grated apple and mix again.

Add the ground oats, spelt flour, and baking powder to the wet ingredients. Mix into a uniform, thicker batter.

Gently and carefully fold the whisked egg whites into the batter. It's important to work gently so the batter stays airy and fluffy.

Heat coconut oil in a pan. Pour in the batter and spread it out evenly (it should be about 1–1.5 cm thick). Cook over medium heat for 3–4 minutes, until the bottom side turns golden brown.

Flip the batter (you can cut it in half beforehand for easier flipping). Use a spatula to tear it into smaller, irregular pieces and cook for another 2–3 minutes, until evenly browned on all sides.
