In a small saucepan over medium heat, warm the blueberries together with a teaspoon of water and lemon zest. Cook for about 3–5 minutes, until the blueberries release their juice and slightly thicken. Finally, stir in honey or maple syrup.

While the blueberries are cooling, in a bowl, blend the cottage cheese with an immersion blender until completely smooth and creamy (like a mousse). Add the vanilla powder and mix well.

Transfer the creamy cottage cheese to a serving bowl. Pour the warm blueberries over it, sprinkle with chia seeds and almond flakes for a crunchy texture. Serve immediately.
