In a glass jar or bowl, mix the oats, chia seeds, a pinch of salt, half of the cinnamon (½ teaspoon) and nutmeg. Mix the dry ingredients well.

Add Greek yogurt, milk, vanilla extract and maple syrup (if using) to the dry mixture. Stir well so that the chia seeds and yogurt are evenly distributed with no lumps.

Cut the apple into small cubes. For the "Apple Pie" effect: put half of the apples in a small pan with a spoon of water and the remaining cinnamon. Sauté for 3-5 minutes until softened and fragrant. Leave the other half of the apples fresh for crunch. (Note: If you're short on time, you can use all the apples raw, but sautéing adds depth of flavor).

Stir the sautéed apples (and the juice that formed) into the oat mixture. Sprinkle fresh apples and chopped walnuts on top. Close the jar and place it in the refrigerator for at least 4 hours, preferably overnight.

The next morning, stir well. If the mixture is too thick, add a spoon of milk. Enjoy cold or quickly warm the jar in the microwave (30-60 seconds).
