Instructions

Cook the whole-grain macaroni "al dente" in salted water according to the package instructions. Before draining, reserve about 100 ml of the cooking water.

In a larger pan, heat the oil from the sun-dried tomatoes and use it to fry the vegan ground meat until it becomes crispy and browned (about 5–7 minutes).

Add the chopped garlic and sliced sun-dried tomatoes to the meat. Sauté for just 1 minute, until the garlic becomes fragrant but doesn't brown.

Pour in the cream and stir in the nutritional yeast, smoked paprika, and oregano. Reduce the heat and let the sauce simmer gently for 2–3 minutes to thicken.

Stir the fresh spinach into the sauce and wait for it to wilt. If the sauce is too thick, add a little of the reserved pasta water.

Add the cooked macaroni to the pan, mix everything well so the sauce coats the pasta, and serve immediately.
