Instructions

Prepare a flax egg by mixing ground flaxseeds with water and letting it sit for 5 minutes to thicken.

In a large bowl, mix together the spelt flour, almond flour, baking soda, salt and all the spices.

Make a well in the center and pour in the melted coconut oil, molasses and maple syrup. Mix into a uniform dough.

Shape the dough into a disk, wrap it in foil and place it in the refrigerator for at least 2 hours (preferably overnight) to let the flavors meld and the dough firm up.

Preheat the oven to 175 °C. Roll out the dough on a floured surface to a thickness of 0.5 cm and cut out desired shapes with cookie cutters.

Place the cookies on a baking sheet, spacing them 2 cm apart, and bake for 8–10 minutes. Do not overbake; the cookies should be firm at the edges but still slightly soft in the center.

Let cool on the baking sheet for 5 minutes, then transfer them to a wire rack.
