Preheat the oven to 180 °C and line a loaf pan with baking paper.

In a large bowl, thoroughly mash the ripe bananas with a fork into a smooth puree.

Add the egg, egg whites, Greek yogurt, applesauce, erythritol, and vanilla extract to the bananas. Whisk everything together into a uniform mixture.

Pour the oat flour, cinnamon, baking soda, and salt into the bowl. Gently fold with a spatula until the ingredients are combined.

Fold two-thirds of the dark chocolate chunks into the batter, then pour the mixture into the prepared pan.

Sprinkle the remaining dark chocolate chunks on top.

Bake for 40–45 minutes at 180 °C, until a toothpick inserted into the center comes out clean.

Let the bread cool in the pan for 15 minutes, then transfer it to a wire rack to cool completely before slicing.
