For the crunchy base

Instructions

In a blender, quickly grind the oat flakes, almonds, coconut butter, honey and salt to get a sticky mixture.

Line a baking dish with parchment paper. Press the mixture evenly onto the bottom and sides of the dish. Place in the fridge while you prepare the filling.

Soak the gelatin in cold water for 5 minutes. In a large bowl, mix the Greek yogurt, cottage cheese, vanilla and maple syrup until smooth.

Melt the squeezed gelatin in a spoonful of warm water and slowly stir it into the yogurt cream. Pour the cream onto the prepared base and smooth it out.

In a saucepan over low heat, cook the cherries with lemon juice and water for about 5–8 minutes, until they soften slightly and release their juice. Let cool.

Spread the cooled cherries with their juice over the top of the yogurt cream. Place the pie in the fridge for at least 4 hours (preferably overnight) to fully set.
