Instructions

Preheat the oven to 180 °C. Lightly grease the baking dish with a little coconut oil or butter.

In a bowl, mix the cottage cheese, eggs, honey, vanilla, lemon zest, and a pinch of salt. For the best texture, use an immersion blender to make the mixture completely smooth and creamy.

Gently fold in the almond flour and two-thirds of the blueberries with a spatula.

Pour the mixture into the prepared baking dish(es). Sprinkle the remaining blueberries on top.

Bake for 30–35 minutes, until the edges turn golden brown and the center is firm to the touch but still slightly jiggly.

Let it rest for 5–10 minutes before serving so the texture can set. Serve warm or cold.
