Bring salted water to a boil in a large pot. Add the whole grain pasta and cook according to the package instructions until "al dente". Important: Before draining the pasta, reserve approximately 100 ml of the starchy cooking water.

While the pasta is cooking, heat olive oil in a pan. Add finely chopped onion and sauté for 3 minutes until translucent. Add minced garlic and sauté for another 30 seconds until fragrant.

Add sliced cherry tomatoes to the pan and cook for 3–4 minutes until they soften and release their juices. Mix in tomato paste, oregano, salt, and pepper. Cook for another 2 minutes.

Stir the drained tuna, corn, and fresh spinach into the sauce. Mix only long enough for the spinach to wilt (approximately 1 minute).

Drain the cooked pasta into the pan and pour in a few spoonfuls of the reserved starchy water. Mix well over medium heat until the sauce coats the pasta and becomes creamy. Serve immediately, garnished with fresh parsley.
