For the fruit part (Rote Grütze)

Instructions

Pour the forest fruits into a pot and add the fruit juice. Add the vanilla powder and sweetener of choice.

Heat the mixture over medium heat until it boils. Cook for 3–5 minutes, until the fruit softens slightly and releases its juices.

Remove the pot from the heat. Stir the lemon juice and chia seeds into the hot fruit mixture. Mix thoroughly with a whisk so the seeds don't clump together.

Let the fruit mixture rest for about 15 minutes at room temperature, then transfer it to the fridge for at least 2 hours. The chia seeds will swell and naturally thicken the pudding into a gel-like texture.

Meanwhile, prepare the vanilla cream: in a bowl, mix Greek yogurt (or Skyr), protein powder and almond milk. Stir until you get a smooth, pourable cream.

Pour the chilled fruit pudding into glass jars first, then top with a generous layer of vanilla cream.

Garnish with a fresh strawberry or a mint leaf and serve.
