Instructions

Cut the dates lengthwise with a knife, but not all the way through, to create a "boat" shape. Carefully remove the pit.

Using a small spoon, fill the center of each date with about half a teaspoon of peanut butter.

Press one whole peanut or almond into the peanut butter, then gently press the date together so the filling doesn't leak out.

Slowly melt the dark chocolate together with the coconut oil over a water bath. Stir until the mixture is completely smooth.

Using a spoon, coat each stuffed date with the melted chocolate.

Place the dates on a baking sheet lined with parchment paper. Immediately sprinkle them with a pinch of sea salt before the chocolate sets.

Place in the refrigerator for 20 minutes to let the chocolate fully set. Store in a sealed container in the refrigerator for up to two weeks.
