In one bowl, whisk the egg whites with a pinch of salt until stiff peaks form.

In another bowl, mix the egg yolks, erythritol, vanilla and almond milk. Gradually add the almond flour and baking powder and mix until smooth.

Using a spatula, carefully and slowly fold the whisked egg whites into the egg yolk mixture to preserve as much air as possible.

Melt the butter in a pan over medium heat. Pour in the batter and cover the pan. Cook for 4–5 minutes, until the bottom turns golden brown.

Cut the batter into quarters, flip them, and cook for another 2 minutes without the lid. Then tear it into smaller pieces with a spatula.

Fry the pieces for another minute so they brown evenly, then sprinkle with powdered erythritol and serve.
