In a blender, combine fresh spinach, eggs, Greek yogurt and garlic. Blend until you get a completely smooth, intensely green liquid.

In a large bowl, prepare the dry ingredients: spelt flour, oat flour, cream of tartar, salt and pepper. Mix everything together well.

Pour the spinach mixture into the bowl with the dry ingredients. Gently whisk to combine into a uniform batter. If the batter is too thick, add a little almond milk. Finally, fold in the crumbled feta cheese by hand.

Heat the waffle iron thoroughly and, if necessary, lightly grease it with a drop of olive oil.

Pour about 3 tablespoons of batter into the center of the waffle iron. Bake the waffles for 4–6 minutes, until crispy on the outside and cooked through in the center (don't open the waffle iron too soon, or the waffles may fall apart).

Serve warm topped with avocado, smoked salmon or a poached egg.
