Instructions

Preheat the oven to 200 °C. Peel the sweet potatoes and cut them into cubes about 2 cm in size.

Drizzle the potatoes in a baking dish with a tablespoon of oil, season with salt, and roast in the oven for 20–25 minutes until softened and slightly browned at the edges.

Trim any excess skin from the pork tenderloin, pat it dry, and season with salt. Heat the remaining oil in a pan and sear the meat on all sides (6–8 minutes total) until nicely browned.

Remove the meat from the pan, wrap it in foil, and let it rest for at least 8 minutes (this is key for juiciness).

Add pepper and a whole clove of garlic to the same pan. Pour in the stock and scrape up the browned bits with a spoon. Cook until the liquid reduces by half.

Stir in the mustard and cream. Reduce the heat and cook for another minute until the sauce thickens. Slice the pork tenderloin into medallions, place them next to the potatoes, and drizzle with the fresh sauce.
