Pour boiling water over the rice noodles, let stand for 3–5 minutes, then drain and rinse under cold water.

In a small bowl, mix the peanut butter, soy sauce, ginger, lime juice and honey. Gradually add warm water until you get a smooth, creamy sauce.

Pour lukewarm water into a shallow bowl. Dip a sheet of rice paper in the water for 5–10 seconds to soften it slightly (but not too much), and place it on a damp cutting board.

On the bottom third of the paper, place a piece of lettuce, a bit of noodles, and sliced vegetables (carrot, cucumber, bell pepper) along with fresh herbs.

In the middle of the paper (above the vegetables), place three shrimp tails with the back side facing down – this way they will be visible through the paper once rolled.

Fold the bottom edge of the paper over the filling, then fold in the side edges and roll everything up tightly to the end. Repeat with the remaining sheets.

Serve the rolls immediately, cut in half or whole, together with the prepared peanut sauce.
