Cut the tempeh into cubes. To remove any bitterness, steam it in a pot for 10 minutes. Then dry it well.

On a baking sheet, toss the sweet potato with a spoon of oil, paprika, salt and pepper. Bake in the oven at 200 °C for about 15 minutes.

Meanwhile, prepare the dressing in a small bowl by mixing the maple syrup, mustard, vinegar, garlic and soy sauce.

After 15 minutes of baking, add the tempeh to the baking sheet with the sweet potato. Drizzle everything with half of the prepared dressing and bake for another 15 minutes, until everything turns golden brown.

In a large bowl, drizzle the kale with lemon juice and a little salt. Massage it vigorously with your hands for 2-3 minutes, until it becomes soft and dark green.

Add the roasted mixture, apples and the remaining dressing to the bowl with the kale. Gently mix everything together and sprinkle with toasted pumpkin seeds.
