Open a can of full-fat coconut milk that has been in the fridge overnight, and scrape out just the hard, thick part (about 120 g). Save the liquid for smoothies.

Put the shredded coconut, coconut cream, maple syrup, vanilla, and a pinch of salt into a food processor. Mix for 30–60 seconds until the ingredients combine and become slightly sticky. Tip: If you press the mixture between your fingers and it holds its shape, it's perfect.

Using your hands, scoop the mixture and shape it into 12 rectangular bars. Press firmly so they are compact. Place them on a board lined with parchment paper.

Put them in the freezer for 45–60 minutes. This is essential so the bars don't fall apart while dipping in the hot chocolate.

Melt the dark chocolate together with a teaspoon of coconut oil over a water bath (double boiler). Stir until smooth and glossy.

Dip the chilled coconut bars into the melted chocolate (use two forks to make turning easier). Let the excess chocolate drip off and return the bars to the parchment paper.

Place in the fridge for 10 minutes for the chocolate to fully set. Store in the fridge for up to 7 days.
