Chop the onion, garlic, red cabbage, tomato and avocado. Have all the serving ingredients prepared in small bowls before you start cooking the meat.

Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté for 3-4 minutes, until translucent and softened. Add the crushed garlic and sauté for another 1 minute, until fragrant.

Add the ground meat to the pan. Break it up into smaller pieces with a wooden spoon and cook until browned and fully cooked through (about 6-8 minutes). Drain off any excess fat if needed.

Mix all the spices into the meat (cumin, paprika, chili, oregano, salt, pepper). Stir well so the spices release their aroma. Stir in the tomato paste and cook for another 2-3 minutes over low heat, so the flavors combine and a juicy, thick sauce forms.

Meanwhile, quickly warm the tortillas in another dry pan (or in the oven) for about 30 seconds on each side, until they become soft, warm and pliable.

Load the seasoned meat onto the warm tortilla. Add red cabbage for crunch, tomato and avocado cubes, and a spoonful of Greek yogurt. Garnish with fresh cilantro and serve with a lime wedge to squeeze over just before eating.
