In a large bowl, use a mixer to cream the butter (or coconut oil), peanut butter, and sugar. Mix for about 2 minutes, until the mixture becomes smooth.

Mix in the egg and vanilla. Continue mixing for 1 more minute, until the ingredients are fully combined.

Gently fold the oat flour, baking soda, cinnamon, and salt into the butter mixture. Once the mixture is uniform, use a spatula to fold in the whole oats and dark chocolate pieces by hand. Tip: Don't overmix, so the cookies stay soft.

Place the dough in the refrigerator for at least 30 minutes. This prevents the cookies from spreading too much during baking and ensures a richer flavor.

Preheat the oven to 175 °C. Line a baking sheet with parchment paper. Scoop the dough with a spoon and shape into balls. Place them on the baking sheet and gently flatten with a fork or the palm of your hand.

Bake for 10–12 minutes, until the edges turn golden brown and the center still looks slightly soft. Remove from the oven and let the cookies rest on the baking sheet for another 5 minutes (they will firm up there), then transfer them to a wire rack.
