Recipe
Instructions
- 1Rinse the quinoa thoroughly under cold running water in a fine-mesh strainer to remove the saponins (bitterness), then drain it.
- 2Heat the olive oil in a saucepan and sauté the finely chopped shallot until translucent. Add the chopped garlic, cumin, and cayenne pepper, and stir for 30 seconds until the spices become fragrant.
- 3Add the quinoa to the saucepan and toast it together with the aromatics for 1 minute, then pour in the hot broth.
- 4Once it comes to a boil, reduce the heat to minimum, cover the saucepan, and cook for 15 minutes, or until the quinoa has absorbed all the liquid and become fluffy.
- 5Gently stir the black beans and corn into the cooked quinoa. Cover the saucepan again and let it rest for 5 minutes so that all the ingredients heat through evenly.
- 6Before serving, add the lime juice and most of the chopped cilantro. Season with salt and pepper to taste.
- 7Divide the dish into bowls. Top with avocado slices and sprinkle with the remaining cilantro. Serve with a lime wedge.
