Instructions

  1. 1Preheat the oven to 220 °C and line a baking tray with parchment paper. A high temperature is key so the gnocchi become crispy and roasted rather than steamed.
  2. 2In a small bowl, mix the olive oil, crushed garlic, oregano, basil, smoked paprika, salt, pepper and lemon juice.
  3. 3Cut the chicken breast into 2-3 cm cubes. Cut the vegetables (zucchini, bell pepper, onion) into equally sized pieces so they cook evenly.
  4. 4In a large bowl, mix the diced chicken, all the vegetables (including the tomatoes) and the raw gnocchi. Pour the marinade over and mix well so all the ingredients are evenly coated.
  5. 5Spread the mixture over the baking tray in a single layer. Don't overcrowd the tray; use two if necessary. Bake for 20 minutes, carefully stirring halfway through (after 10 min).
  6. 6Remove the tray from the oven, sprinkle the torn mozzarella on top and return to the oven for another 5 minutes (or use the grill function) until the cheese melts and turns golden.
