Instructions

  1. 1Thoroughly rinse the bulgur in a fine-mesh strainer under running water.
  2. 2Bring the almond drink to a boil in a saucepan with a pinch of salt and cinnamon. Add the rinsed bulgur, reduce the heat to a minimum and cover the saucepan.
  3. 3Cook the bulgur slowly for about 12–15 minutes (or according to the package instructions), until it becomes soft and absorbs most of the liquid. Stir occasionally during cooking so it doesn't stick to the bottom.
  4. 4Remove the saucepan from the heat. Stir the chopped dried apricots, honey and vanilla extract into the hot porridge. Let it rest for 2 minutes so the flavors combine.
  5. 5Pour the creamy porridge into a bowl, sprinkle with chopped pistachios and drizzle with the remaining teaspoon of honey.

Nutritional benefits

Thanks to the high content of dietary fiber in bulgur and antioxidants in pistachios, this meal promotes regular digestion and provides a gradual release of energy without sudden blood sugar fluctuations.
