Instructions
- 1In a large pot, bring salted water to a boil and cook the whole-grain noodles according to the package instructions, so they remain al dente. Before draining, reserve 150 ml of the cooking water.
- 2In a pan with olive oil, over low heat, sauté the chopped shallot until it becomes translucent and soft (about 3 minutes). Do not let it brown.
- 3In a small bowl, mix the Greek yogurt with lemon juice and 50 ml of the warm pasta cooking water to get a smooth, runny mixture.
- 4Add the baby spinach to the pan with the shallot and stir just enough for it to wilt slightly. Then tip the drained noodles into the pan.
- 5Pour over the yogurt mixture and add a bit more cooking water if needed. Gently stir over low heat to create a velvety emulsion.
- 6Remove from heat and gently fold in the strips of smoked salmon, dill, capers and lemon zest. Season with pepper to taste and serve immediately.
