Instructions
- 1In a large pot of salted water, cook the whole wheat spaghetti according to the package instructions (al dente). Before draining, reserve 100 ml of the cooking water.
- 2Heat olive oil in a wide pan. Add the prawns and cook over high heat for about 1 minute on each side, until they turn pink. Remove the prawns from the pan and keep them warm.
- 3In the same pan, add the garlic and chili. Sauté for just 30 seconds, until the garlic becomes fragrant but not browned. Pour in the white wine and let it reduce by half.
- 4Stir the butter and 50 ml of the reserved pasta water into the pan. Mix until you get a slightly creamy emulsion.
- 5Add the spaghetti and prawns to the pan. Add the lime juice, zest, and parsley. Mix everything well over medium heat so the sauce coats the pasta. If the dish is too dry, add the remaining cooking water.
- 6Season with salt and pepper to taste. Serve immediately while the dish is still hot and juicy.
Nutritional benefits
