Rinse the rice under cold water and cook it according to the package instructions (usually in a 1:2 ratio with water). Once cooked, remove from heat and let it rest covered for 5 minutes.

In a small bowl, mix the soy sauce, honey, grated ginger and garlic to make the glaze. In another bowl, mix Greek yogurt, sriracha, lime juice and sesame oil until smooth to make the dressing.

Pat the salmon cubes dry with a paper towel and season lightly with salt and pepper. Heat the olive oil in a pan over medium-high heat. Add the salmon and cook for 2-3 minutes until golden brown. Turn the cubes and cook for another 1 minute.

Reduce the heat and pour the prepared glaze (soy sauce and honey mixture) over the salmon. Cook for another 1 minute, gently stirring the cubes so the sauce thickens and coats the fish. Remove from heat.

In a deep bowl, first layer the cooked rice. On top, arrange in separate piles, aesthetically: glazed salmon, edamame, avocado, cucumber, mango and pickled onion.

Drizzle everything with the spicy yogurt dressing and sprinkle with sesame seeds and fresh cilantro/onion. Serve immediately.
