In a large pot with olive oil over high heat, sear the pork pieces until they develop a brown crust. Remove the meat from the pot and set aside.

In the same pot, add the onion and bell pepper. Sauté for 5 minutes until the vegetables soften. Then stir in the garlic and all the spices (cumin, smoked paprika, oregano, chili) and sauté for another 1 minute until fragrant.

Return the meat to the pot and pour in the tomato paste and stock. Mix well and scrape the bottom of the pot to release all the browned bits from the meat.

Cover the pot, reduce the heat, and cook on low for about 45–50 minutes, until the pork is completely tender.

Add the rinsed black beans to the pot and cook for another 10 minutes without the lid, until the sauce thickens slightly and the beans are well heated through.

Season with additional salt and pepper if needed. Serve hot, sprinkled with fresh herbs.
