Instructions
- 1Cook the pasta in salted boiling water, but drain it 2 minutes earlier than stated on the package (al dente). Rinse with cold water to stop the cooking process.
- 2In a pan with a little oil, quickly sauté the chopped garlic and spinach until wilted. Drain the spinach and chop it slightly if needed.
- 3In a bowl, mix the ricotta, egg, sautéed spinach, half of the parmesan, nutmeg, salt, and pepper.
- 4Pour the tomato passata, to which you've added oregano and a bit of salt, into a baking dish.
- 5Fill each pasta shell with the prepared filling and place it in the baking dish on top of the tomato sauce.
- 6Sprinkle everything with the remaining parmesan and bake in a preheated oven at 200 °C for about 20–25 minutes, until the cheese is golden and baked through.
