Heat olive oil in a large pot. Add the chopped onion and bell pepper and sauté over medium heat for about 5–7 minutes, until the vegetables soften.

Add the ground beef. Break up the meat with a spoon and cook until it browns completely. If too much fat accumulates, carefully drain it off.

Stir the chopped garlic, tomato paste and all the spices (chilli, cumin, smoked paprika, cinnamon, oregano, salt and pepper) into the pot. Sauté for 1–2 minutes until the spices become fragrant.

Pour in the diced tomatoes and beef stock. Mix well and scrape the bottom of the pot to release all the browned flavors.

Reduce the heat to low, partially cover the pot and cook for at least 35–45 minutes. Longer cooking will allow the sauce to thicken and the flavors to develop without the need for beans.

Before serving, taste the dish and add more salt if needed.

Serve in bowls, optionally topped with grated cheese, a spoonful of Greek yogurt or avocado slices.
