Instructions

Using a sharp knife, score the skin of the duck breasts in a crosshatch pattern. Be careful to cut only through the fat and not into the meat. Season the meat with salt and pepper.

Place the duck breasts skin-side down in a cold pan. Only then turn on medium heat. This allows the fat to slowly render while the skin becomes exceptionally crispy.

Cook skin-side down for about 8–10 minutes, until the skin is golden brown and crispy. Drain off the excess fat from the pan.

Turn the fillets over and cook for another 3–5 minutes on the other side (for medium, pink meat). Remove the meat from the pan and let it rest on a warm plate for at least 5 minutes.

In the same pan (or a separate saucepan), sauté the shallot in a little of the duck fat. Add the red wine and balsamic vinegar and cook until the liquid reduces by half.

Add the forest berries and thyme. Cook for another 2–3 minutes, until the berries release their juice. Finally, stir in the butter for a silky texture and shine.

Slice the duck breasts, pour the hot sauce over them, and serve with roasted vegetables.
