Instructions
- 1Cook the whole-grain macaroni "al dente" in salted water according to the package instructions. Before draining, reserve about 100 ml of the cooking water.
- 2In a larger pan, heat the oil from the sun-dried tomatoes and use it to fry the vegan ground meat until it becomes crispy and browned (about 5–7 minutes).
- 3Add the chopped garlic and sliced sun-dried tomatoes to the meat. Sauté for just 1 minute, until the garlic becomes fragrant but doesn't brown.
- 4Pour in the cream and stir in the nutritional yeast, smoked paprika, and oregano. Reduce the heat and let the sauce simmer gently for 2–3 minutes to thicken.
- 5Stir the fresh spinach into the sauce and wait for it to wilt. If the sauce is too thick, add a little of the reserved pasta water.
- 6Add the cooked macaroni to the pan, mix everything well so the sauce coats the pasta, and serve immediately.
