Instructions

  1. 1Cut the pork into even cubes and pat it dry with a paper towel.
  2. 2In a large cast-iron pot, heat the olive oil over medium heat. Add the diced pork and sauté for 5 to 7 minutes until browned on all sides, then transfer it to a plate.
  3. 3Add the chopped onion and carrot to the same pot and sauté for 5 minutes until the vegetables soften.
  4. 4Add the diced bell pepper, zucchini and chopped garlic. Sauté everything together for another 3 minutes until the garlic becomes fragrant.
  5. 5Add the rinsed rice, ground sweet paprika, salt and ground black pepper to the pot. Stir the ingredients for 1 minute so the rice absorbs the spices.
  6. 6Add the chopped tomato, return the seared meat along with its juices, and pour in the warm broth. Add the bay leaf and mix well.
  7. 7Once the liquid comes to a boil, cover the pot, reduce the heat to low and simmer slowly for 25 to 30 minutes, until the rice and meat soften and absorb the flavorful liquid.
  8. 8Before serving, remove the bay leaf from the dish, sprinkle fresh chopped parsley on top, and serve warm.
