Instructions

Preheat the oven to 175 °C. Line a bread pan with baking paper.

In one bowl, mix the dry ingredients: almond flour, coconut flour, erythritol, baking powder and salt.

In another bowl, whisk together the eggs, almond milk, melted butter (not hot), vanilla and lemon zest.

Pour the wet ingredients into the dry ones and mix until you get a uniform batter. The mixture will be thick, which is normal for LCHF baking.

In a small bowl, toss the blueberries in one tablespoon of almond flour. This will prevent the blueberries from sinking to the bottom during baking. Then gently fold the blueberries into the batter.

Pour the batter into the pan and smooth the top with a spatula.

Bake for 45–55 minutes. If the top browns too quickly, loosely cover it with aluminum foil after 30 minutes. Check for doneness with a toothpick.

Let the bread cool in the pan for at least 20 minutes, then carefully remove it and let it cool completely on a wire rack.
