Instructions

In a bowl, thoroughly mix cashew butter, maple syrup, coconut milk, vanilla and salt until you get a smooth cream.

Stir the shredded coconut into the cream. Knead the mixture with your hands or a spoon until the ingredients are fully combined into a firm mixture. If the mixture is too soft, place it in the refrigerator for 10 minutes.

Shape small balls with your palms (about the size of a walnut).

Push one whole blanched almond into the center of each ball, then reshape it so the almond stays in the middle.

Roll each ball in shredded coconut until evenly coated.

Store the balls in an airtight container in the refrigerator, where they will stay fresh for up to one week.
