Preheat the oven to 180 °C. Peel the zucchini, cut them in half, and remove all the seeds with a spoon. Slice them into thin crescents, similar to apple slices.

In a saucepan over medium heat, cook the zucchini slices with lemon juice, cinnamon, erythritol, and cream of tartar for about 10–15 minutes. The zucchini should soften and absorb the flavor, and the liquid should thicken slightly.

In a separate bowl, prepare the crumble. Mix the almond flour, chopped walnuts, erythritol, and salt. Using a fork or your fingers, work in the cold butter until you get a crumbly texture.

Transfer the cooked zucchini into a baking dish. Evenly sprinkle the prepared crumble on top.

Bake for 25–30 minutes, or until the crumble turns golden brown and the filling starts to bubble at the edges.
