Thoroughly rinse the bulgur in a fine-mesh strainer under running water.

Bring the almond drink to a boil in a saucepan with a pinch of salt and cinnamon. Add the rinsed bulgur, reduce the heat to a minimum and cover the saucepan.

Cook the bulgur slowly for about 12–15 minutes (or according to the package instructions), until it becomes soft and absorbs most of the liquid. Stir occasionally during cooking so it doesn't stick to the bottom.

Remove the saucepan from the heat. Stir the chopped dried apricots, honey and vanilla extract into the hot porridge. Let it rest for 2 minutes so the flavors combine.

Pour the creamy porridge into a bowl, sprinkle with chopped pistachios and drizzle with the remaining teaspoon of honey.
