In a saucepan, mix the oats, chia seeds, cinnamon, and a pinch of salt. Pour in the liquid (water/milk). Bring to a boil, then reduce the heat and cook for 5–7 minutes, until the oats soften and the liquid is absorbed. Stir occasionally.

While the oatmeal is cooking, slice the banana into rounds. Heat coconut oil in a pan. Add the banana slices and (optionally) a drizzle of maple syrup. Cook for 2 minutes on each side, until golden brown and soft.

Once the oatmeal is cooked, remove it from the heat and let it sit for 1–2 minutes to cool slightly. This is crucial! If you mix protein powder into boiling oatmeal, it will curdle and become lumpy.

Stir in the protein powder. If the mixture is too thick, add another tablespoon or two of milk to achieve the desired creamy texture.

Pour the oatmeal into a bowl. Top with the caramelized bananas and drizzle with the syrup left in the pan. Sprinkle with chopped walnuts, if desired.
