In a glass jar, mix the oats, chia seeds, cinnamon and a pinch of salt.

Add the almond milk, Greek yogurt, vanilla extract and maple syrup. Mix all the ingredients thoroughly to get a uniform mixture without dry oat clumps.

Wash the peach and cut it into small pieces. Stir most of the peach into the oats, saving a few pieces for garnishing on top.

Seal the jar tightly with a lid and place it in the refrigerator for at least 4 hours (ideally overnight), so the oats soften completely and the mixture becomes creamy.

Before serving, sprinkle chopped almonds or walnuts on top for a crunchy texture and add the remaining peach pieces.
