Prepare the pineapple by peeling it and cutting it into cubes. For a creamier and colder texture, you can use frozen pineapple.

Pour the coconut water into the blender jug first and add the Greek yogurt. Having the wet ingredients at the bottom allows for faster blending without lumps.

Add the fresh baby spinach, pineapple chunks, grated ginger, chia seeds, and lemon juice.

Blend all the ingredients at high speed for about 60 seconds, until the smoothie becomes completely smooth, velvety, and vibrant green in color.
