First, prepare all the dry ingredients. Pour the oats into a blender and blend until you get a coarse flour-like texture. Add the baking powder, cinnamon, and a pinch of salt, then mix briefly.

In the same blender (or in another bowl if working by hand), add the ripe bananas, eggs, Greek yogurt, and vanilla. Blend until smooth. If you want banana chunks in your pancakes, mash the bananas with a fork instead and mix them in by hand with the eggs and yogurt.

Stir the wet ingredients into the dry ones (or vice versa). Let the batter rest for 2–3 minutes. This is a key step, as the oats absorb the liquid, preventing the pancakes from staying raw inside. The batter should be thick but pourable.

Heat the pan over medium-low heat (important: banana pancakes burn quickly on high heat while remaining raw inside). Lightly grease the pan. Spoon the batter into small circles.

Cook for about 2 minutes on the first side. Once bubbles appear on the surface and the edges set, carefully flip the pancake. Cook for another 1–2 minutes on the other side until golden brown.
