Instructions

Place the tomato slices on a paper towel, lightly salt them, and let them sit for 3 minutes to drain off excess liquid.

If desired, lightly toast the slices of whole-grain bread in a toaster or in a pan.

Spread cream cheese on one side of all 4 slices of bread.

On two slices of bread, layer the baby spinach leaves, tomato slices, crunchy cucumber, grated carrot, strips of red pepper, and red onion rings in sequence.

Cover the sandwiches with the remaining slices of bread and gently press them together with your palm.

Cut the sandwiches diagonally in half with a sharp knife and serve immediately.
