Wash the apples, peel them (if desired, you can leave some of the peel on for extra fiber), remove the cores, and cut them into smaller cubes.

Put the diced apples into a pot, add water, lemon juice, and lemon zest.

Cover the pot and cook over medium heat for about 15–20 minutes, until the apples are completely softened. Stir occasionally while cooking.

Once the apples are soft, remove the pot from the heat. Add cinnamon, vanilla powder, and a pinch of salt.

Blend the mixture with an immersion blender to the desired texture (completely smooth for a classic apple sauce, or with a few chunks for a more rustic look).

Let the sauce cool slightly. Serve it as a standalone dessert, a topping for porridge, or as a side to cottage cheese dishes.
