Preheat the oven to 200 °C and line a baking sheet with parchment paper.

Prepare the corn. This is the most important step: stand the corn cob upright on a stable cutting board and carefully cut it in half lengthwise, then cut each half in half again to get 4 long strips (ribs). Be extremely careful and use a sharp knife.

In a small bowl, mix the olive oil, smoked paprika, garlic powder, cumin, oregano, salt, and chili.

Place the corn ribs on the baking sheet and use a brush to evenly coat them with the spice mixture on all sides.

Bake in the preheated oven for 20–25 minutes. While baking, the corn will naturally curl into a rib-like shape, and the edges will become crispy and slightly charred.

Remove the baked ribs from the oven, sprinkle with chopped cilantro, and drizzle with fresh lime juice.
