Thoroughly rinse the rice under running water until the water runs clear. Cook it in 250 ml of water in a covered pot for about 15 minutes, then let it rest for another 10 minutes.

Transfer the cooked rice to a bowl, drizzle it with rice vinegar and salt, and gently mix with a wooden spoon. Let it cool completely to room temperature.

Drain the tuna in its own juice well and mix it in a small bowl with lemon juice. Cut the cucumber, carrot, and avocado into long, thin strips.

Place a sheet of nori seaweed on a bamboo mat (shiny side down). With wet hands, spread half of the rice evenly over the seaweed, leaving a 2 cm empty border at the top edge.

Lay half of the tuna, cucumber, carrot, and avocado horizontally on the bottom third of the rice.

Using the mat, tightly roll the sushi into a roll. Lightly moisten the empty edge of the seaweed with water to seal the roll. Repeat the process with the second sheet of seaweed.

Using a sharp, damp knife, cut the roll into 6–8 even pieces.
