Preheat the oven to 200 °C and line a baking sheet with parchment paper.

In a bowl, mix the spelt flour, Greek yogurt, baking powder and salt. Knead by hand into a smooth dough. If it's too sticky, add another tablespoon of flour.

In another bowl, prepare the filling: mix the shredded chicken, cream cheese, grated mozzarella, chopped bell pepper and spices.

Divide the dough into 12 equal pieces. Flatten each piece between your palms into a circle, place a spoonful of filling in the center and close the dough into a ball.

Place the bombs seam-side down on the baking sheet. If desired, brush them with a little olive oil or sprinkle with sesame seeds.

Bake for 18–20 minutes or until the bombs turn golden brown and crispy.
